Description

Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups heavy cream
  • 1 cup semi-sweet chocolate, chopped
  • 1 cup fresh raspberries
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 3 tablespoons cold water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs with melted butter and press into the bottom of a springform pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a saucepan, heat 1 cup of heavy cream until it begins to simmer, then remove from heat and add chopped chocolate, stirring until smooth.
  5. In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes, then heat until dissolved.
  6. Combine the chocolate mixture with the dissolved gelatin, then let it cool slightly.
  7. In a separate bowl, whip the remaining heavy cream with powdered sugar and vanilla until soft peaks form.
  8. Fold the whipped cream into the chocolate mixture until well combined.
  9. Pour half of the mousse over the cooled crust, then layer with fresh raspberries.
  10. Add the remaining mousse on top and refrigerate for at least 4 hours or until set.
  11. Serve chilled, garnished with additional raspberries if desired.

Notes

  • For a richer flavor, use dark chocolate instead of semi-sweet.
  • Ensure the gelatin is fully dissolved to avoid lumps in the mousse.
  • This cake can be made a day in advance for better flavor.
