Ingredients

  • 1 cup chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 cup semi-sweet chocolate chips
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a separate bowl, beat the cream cheese and peanut butter until smooth.
  5. Add powdered sugar and vanilla extract, mixing until well combined.
  6. In another bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the peanut butter mixture.
  8. Melt the chocolate chips and let cool slightly, then fold into the mousse mixture.
  9. Pour the mousse over the crust in the springform pan.
  10. Refrigerate for at least 4 hours or until set.
  11. Serve chilled and enjoy!

Notes

  • For a richer flavor, use dark chocolate chips.
  • Make sure the cream cheese is at room temperature for easier mixing.
  • Top with additional whipped cream or chocolate shavings if desired.
