Ingredients

  • 1 cup dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed espresso, cooled
  • 1 cup heavy cream
  • 1 tablespoon cocoa powder, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a double boiler, melt the dark chocolate and butter together until smooth.
  3. Remove from heat and stir in the sugar, eggs, vanilla extract, and cooled espresso until well combined.
  4. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  5. Let the cake cool completely in the pan before transferring to a serving plate.
  6. In a separate bowl, whip the heavy cream until soft peaks form, then spread it over the cooled cake.
  7. Dust with cocoa powder before serving.

  • For a stronger coffee flavor, use a dark roast espresso.
  • Make sure the cake is completely cooled before adding the mousse topping.
