- 1 cup dark chocolate, chopped
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brewed espresso, cooled
- 1 cup heavy cream
- 1 tablespoon cocoa powder, for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a double boiler, melt the dark chocolate and butter together until smooth.
- Remove from heat and stir in the sugar, eggs, vanilla extract, and cooled espresso until well combined.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cake cool completely in the pan before transferring to a serving plate.
- In a separate bowl, whip the heavy cream until soft peaks form, then spread it over the cooled cake.
- Dust with cocoa powder before serving.
Notes
- For a stronger coffee flavor, use a dark roast espresso.
- Make sure the cake is completely cooled before adding the mousse topping.
- This cake can be made a day in advance and stored in the refrigerator.
