- 1 cup dark chocolate, chopped
- 1/2 cup unsalted butter
- 3 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup cherry puree
- 1/4 cup powdered sugar
- Fresh cherries for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, melt the dark chocolate and butter over low heat, stirring until smooth.
- In a bowl, whisk together the eggs and granulated sugar until light and fluffy.
- Stir in the melted chocolate mixture and vanilla extract.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture.
- Pour half of the mousse into a cake pan and freeze for 30 minutes.
- Spread the cherry puree over the frozen mousse layer.
- Top with the remaining mousse and freeze for at least 2 hours.
- Before serving, garnish with fresh cherries.
