Description

  • For the Eggrolls:
    • 2 cups cooked chicken, shredded
    • 1 cup black beans, drained and rinsed
    • 1 cup corn, frozen or canned
    • 1 cup cream cheese, softened
    • 1 teaspoon cumin
    • 1 teaspoon chili powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/4 teaspoon cayenne pepper (optional)
    • 12 eggroll wrappers
  • For Frying:
    • Vegetable oil, for frying

Instructions

  1. In a large mixing bowl, combine the shredded chicken, black beans, corn, cream cheese, cumin, chili powder, garlic powder, onion powder, and cayenne pepper. Mix until well combined.
  2. Lay an eggroll wrapper on a clean surface with a corner pointing towards you. Place 2-3 tablespoons of the filling in the center.
  3. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water to seal the top corner.
  4. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  5. Carefully place the eggrolls in the hot oil, frying in batches for about 3-4 minutes or until golden brown and crispy.
  6. Remove the eggrolls and drain on paper towels. Serve hot with your favorite dipping sauce.
