- For the Eggrolls:
- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup cream cheese, softened
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- 12 eggroll wrappers
- For Frying:
- Vegetable oil, for frying
Instructions
- In a large mixing bowl, combine the shredded chicken, black beans, corn, cream cheese, cumin, chili powder, garlic powder, onion powder, and cayenne pepper. Mix until well combined.
- Lay an eggroll wrapper on a clean surface with a corner pointing towards you. Place 2-3 tablespoons of the filling in the center.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water to seal the top corner.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Carefully place the eggrolls in the hot oil, frying in batches for about 3-4 minutes or until golden brown and crispy.
- Remove the eggrolls and drain on paper towels. Serve hot with your favorite dipping sauce.
