  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 package puff pastry, thawed

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large saucepan, melt butter over medium heat. Add onions and cook until translucent.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in chicken broth and milk, cooking until thickened.
  5. Add chicken, carrots, peas, potatoes, salt, pepper, and thyme. Mix well.
  6. Pour the mixture into a pie dish.
  7. Roll out the puff pastry and place it over the filling. Seal the edges and cut slits for steam to escape.
  8. Bake for 30-35 minutes or until the pastry is golden brown.
  9. Let it cool for a few minutes before serving.
