Ingredients

  • Chicken: 2 cups cooked, shredded chicken
  • Poblano Peppers: 2 medium, roasted and diced
  • Black Beans: 1 can (15 oz), drained and rinsed
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Chicken Broth: 4 cups
  • Cream: 1 cup heavy cream
  • Spices: 1 tsp cumin, 1 tsp smoked paprika, salt and pepper to taste
  • Olive Oil: 2 tbsp for sautéing

Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the diced onion and sauté for 5-7 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the roasted poblano peppers, shredded chicken, black beans, chicken broth, cumin, smoked paprika, salt, and pepper. Bring to a simmer.
  5. Reduce heat to low and let the soup simmer for 20 minutes, stirring occasionally.
  6. Stir in the heavy cream and heat through for another 5 minutes. The soup should be creamy and slightly thickened.
  7. Serve hot, garnished with fresh cilantro if desired.
