Ingredients

  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 tsp thyme
  • 1 tsp parsley
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat your pot: Drizzle olive oil into a large pot and warm it over medium heat until shimmering.
  2. Sauté aromatics: Add the chopped onions and minced garlic. Sauté them until the onions turn translucent and fragrant, about 3-5 minutes.
  3. Cook chicken: Toss in the diced chicken and cook until browned on all sides.
  4. Add vegetables: Stir in the sliced mushrooms, carrots, and celery and cook for another 5 minutes.
  5. Pour liquids: Add the chicken broth and water, thyme, parsley, salt, and pepper. Stir to combine.
  6. Bring to a boil: Increase heat to medium-high until boiling, then reduce heat to low and simmer for 20-30 minutes.
  7. Final touches: Adjust seasoning and serve warm.

Notes
