- 2 cups water
- 2 carrots, sliced
- 2 celery stalks, sliced

- 1 tsp parsley
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat your pot: Drizzle olive oil into a large pot and warm it over medium heat until shimmering.
- Sauté aromatics: Add the chopped onions and minced garlic. Sauté them until the onions turn translucent and fragrant, about 3-5 minutes.
- Cook chicken: Toss in the diced chicken and cook until browned on all sides.
- Add vegetables: Stir in the sliced mushrooms, carrots, and celery and cook for another 5 minutes.
- Pour liquids: Add the chicken broth and water, thyme, parsley, salt, and pepper. Stir to combine.
- Bring to a boil: Increase heat to medium-high until boiling, then reduce heat to low and simmer for 20-30 minutes.
- Final touches: Adjust seasoning and serve warm.
