Description

A Southern classic featuring tenderized steak coated in a crispy crust, served with rich, creamy gravy.


Ingredients

  • 1 pound tenderized steak (cube steak)
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • Salt and pepper to taste
  • Oil for frying
  • 1/4 cup butter
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt and pepper to taste (for gravy)

Instructions

  1. Season the steak with salt and pepper.
  2. Prepare your dredging stations with flour, and whisk together eggs and milk.
  3. Dredge the steak in flour, then in the egg-milk mixture, and back into the flour.
  4. Heat oil in a cast-iron skillet over medium heat.
  5. Fry the steak for 3 to 5 minutes on each side until golden brown.
  6. Make the gravy by melting butter and whisking in flour, then adding milk until thickened.
  7. Serve the fried steak topped with creamy gravy and garnish with parsley.

Notes

Prepare breaded steaks in advance and fry just before serving for the best texture. For a lighter version, consider using an air fryer.
