Chicken Bell Pepper Ranch Burritos

Ingredients

Here’s everything you need to make 4 large burritos:

Main Ingredients:

  • 2 cups cooked chicken, shredded
    Use leftover roasted chicken, rotisserie, or grilled breast. It’s the hearty base of the filling.

  • 1 cup bell peppers, chopped (any colors)
    Red, yellow, orange, or green—choose a mix for both sweetness and crunch.

  • 1/2 cup ranch dressing
    Creamy, tangy ranch pulls the ingredients together and adds bold flavor.

  • 1 cup shredded cheese
    Cheddar works great, but you can try Monterey Jack, mozzarella, or a Mexican blend.

  • 4 large flour tortillas
    Burrito-sized tortillas hold the fillings securely and wrap without tearing.

Optional Add-ins:

  • 1 can black beans, drained
    Adds extra protein and fiber, plus a hearty texture.

  • 1/2 cup corn (fresh, canned, or frozen)
    Sweet corn pairs beautifully with the ranch and peppers.

  • Salt and pepper, to taste


Instructions

Step 1: Prepare the Filling

In a large bowl, combine:

  • 2 cups of shredded chicken

  • 1 cup of chopped bell peppers

  • 1/2 cup ranch dressing

  • 1 cup of shredded cheese

If you’re adding black beans and corn, now is the time:

  • Add 1 can of black beans (drained)

  • Add 1/2 cup of corn

Season the mix with salt and pepper to taste. Stir everything until well combined and evenly coated in the ranch dressing. The goal is a creamy, colorful, and balanced filling.

Step 2: Warm the Tortillas

Place each tortilla on a microwave-safe plate or skillet and warm for about 10–15 seconds. Warm tortillas are more pliable and less likely to tear when rolling.

Step 3: Assemble the Burritos

  • Lay one tortilla flat on your work surface.

  • Spoon a generous portion (about 3/4 cup) of the filling into the center.

  • Fold the sides inward, then roll from the bottom up, keeping everything tight and compact.

Repeat with the remaining tortillas and filling.

Step 4: Optional – Bake for a Melty Finish

If you like your burritos a bit crispy and extra cheesy, place them seam-side down in a greased baking dish. Top with shredded cheese and bake at 350°F (175°C) for 10–12 minutes, or until the cheese is melted and bubbly.

Step 5: Serve Warm

Once they’re done, serve warm with your favorite sides or dipping sauces. Enjoy the melty cheese, the burst of ranch, and the fresh crunch of bell peppers in every bite.
