Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 can cream of mushroom soup
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of mushroom soup, mixed vegetables, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. If using, sprinkle shredded cheese on top.
  5. Cover the dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the rice is tender and the cheese is bubbly.
  7. Let it cool for a few minutes before serving.
