- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh cherries, pitted and halved
- Butter or oil for cooking
Instructions
- In a large bowl, mix together the ricotta cheese, eggs, milk, and vanilla extract until well combined.
- In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Gently fold in the cherries.
- Heat a skillet over medium heat and add a little butter or oil.
- Pour 1/4 cup of batter for each pancake onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for another 2-3 minutes until golden brown.
- Serve warm with additional cherries and syrup if desired.
Notes
- For a lighter version, you can use low-fat ricotta cheese.
