Ingredients

  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine cherries, balsamic vinegar, honey, olive oil, and garlic. Cook over medium heat until the sauce thickens.
  3. Season the pork tenderloin with salt and pepper.
  4. Heat a skillet over medium-high heat and sear the pork on all sides until browned.
  5. Transfer the pork to a baking dish and pour the cherry balsamic sauce over it.
  6. Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  7. Let the pork rest for 5 minutes before slicing and serving with the sauce.

Notes

  • For a thicker glaze, reduce the sauce further on the stove.
  • Serve with roasted vegetables or mashed potatoes for a complete meal.
