- 1.5 lbs pork tenderloin
- 1 cup fresh cherries, pitted and halved
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine cherries, balsamic vinegar, honey, olive oil, and garlic. Cook over medium heat until the sauce thickens.
- Season the pork tenderloin with salt and pepper.
- Heat a skillet over medium-high heat and sear the pork on all sides until browned.
- Transfer the pork to a baking dish and pour the cherry balsamic sauce over it.
- Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
- Let the pork rest for 5 minutes before slicing and serving with the sauce.
Notes
- For a thicker glaze, reduce the sauce further on the stove.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
