- 4 medium zucchinis, sliced
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine sliced zucchinis, garlic, salt, and pepper.
- In another bowl, mix together sour cream, cheddar cheese, and half of the Parmesan cheese.
- Layer half of the zucchini mixture in a greased baking dish.
- Spread half of the cheese mixture over the zucchini.
- Repeat the layers with the remaining zucchini and cheese mixture.
- Top with breadcrumbs and the remaining Parmesan cheese.
- Drizzle with olive oil.
- Bake for 30-35 minutes or until golden and bubbly.
Notes
- For a spicier version, add red pepper flakes.
- Can substitute Greek yogurt for sour cream for a healthier option.
- Let the casserole sit for a few minutes before serving to set.
