Ingredients

  • 4 medium zucchinis, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine sliced zucchinis, garlic, salt, and pepper.
  3. In another bowl, mix together sour cream, cheddar cheese, and half of the Parmesan cheese.
  4. Layer half of the zucchini mixture in a greased baking dish.
  5. Spread half of the cheese mixture over the zucchini.
  6. Repeat the layers with the remaining zucchini and cheese mixture.
  7. Top with breadcrumbs and the remaining Parmesan cheese.
  8. Drizzle with olive oil.
  9. Bake for 30-35 minutes or until golden and bubbly.
