Cheesy Taco Potatoes are a delicious and hearty twist on traditional tacos, combining the flavors of taco seasoning, cheese, and potatoes for a satisfying meal.

- 4 large potatoes
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake them for about 45 minutes or until tender.
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and water as per packet instructions, and simmer for 5 minutes.
- Once the potatoes are done, cut them in half and scoop out some of the insides.
- Mix the scooped potato with the taco meat and half of the cheese.
- Fill the potato skins with the mixture and top with remaining cheese.
- Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Serve topped with sour cream, diced tomatoes, and green onions.
Notes
- For a vegetarian option, substitute ground beef with black beans or lentils.
- Feel free to add other toppings like jalapeños or avocado.
- These can be made ahead of time and reheated in the oven.
