Description

Cheesy Taco Potatoes are a delicious and hearty twist on traditional tacos, combining the flavors of taco seasoning, cheese, and potatoes for a satisfying meal.


Ingredients

  • 4 large potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake them for about 45 minutes or until tender.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  4. Add taco seasoning and water as per packet instructions, and simmer for 5 minutes.
  5. Once the potatoes are done, cut them in half and scoop out some of the insides.
  6. Mix the scooped potato with the taco meat and half of the cheese.
  7. Fill the potato skins with the mixture and top with remaining cheese.
  8. Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Serve topped with sour cream, diced tomatoes, and green onions.

  • For a vegetarian option, substitute ground beef with black beans or lentils.
  • Feel free to add other toppings like jalapeños or avocado.
