  • Taco Seasoning: 2 tablespoons
  • Vegetables: 1 can (15 oz) black beans, drained and rinsed; 1 cup corn; 1 cup diced tomatoes
  • Broth: 2 cups chicken broth
  • Condiments: 1/2 cup sour cream; 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, uncooked rice, taco seasoning, black beans, corn, diced tomatoes, and chicken broth.
  3. Stir in half of the shredded cheddar cheese and the sour cream until well mixed.
