These Cheesy Rotel Beef Soft Tortilla Tacos are a delightful explosion of flavors and textures. The tender, seasoned beef melds perfectly with the creamy cheese and zesty Rotel tomatoes, all wrapped in a soft tortilla that adds a comforting chewiness to every bite.

Ingredients

Scale
  • Beef Filling:
    • 1 lb ground beef
    • 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
    • 1 packet taco seasoning (1 oz)
    • 1/2 cup water
  • Cheese:
    • 1 cup shredded cheddar cheese
  • Tortillas:
    • 8 soft flour tortillas
  • Toppings:
    • 1/2 cup sour cream
    • 1/2 cup shredded lettuce
    • 1/4 cup diced tomatoes
    • 1/4 cup sliced jalapeños (optional)

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked, about 5-7 minutes.
  2. Drain excess fat and return the skillet to the heat.
  3. Add the drained Rotel tomatoes, taco seasoning, and water to the beef. Stir well to combine.
  4. Simmer the mixture for 5-10 minutes, or until the sauce thickens slightly.
  5. While the beef is simmering, warm the tortillas in a separate skillet over low heat for about 30 seconds on each side.
  6. Once the beef mixture is ready, remove it from heat and stir in the shredded cheddar cheese until melted.
  7. Assemble the tacos by placing a generous scoop of the beef mixture onto each tortilla.
  8. Add desired toppings such as sour cream, lettuce, tomatoes, and jalapeños before folding the tortillas over the filling.

Notes

  • Make-ahead: The beef filling can be prepared a day in advance and stored in the refrigerator. Reheat before serving.
  • Storage: Leftover tacos can be stored in an airtight container in the fridge for up to 3 days.
  • Substitutions: Ground turkey or chicken can be used instead of beef for a lighter option.
