Ingredients

  • Potatoes: 2 pounds of baby Yukon gold potatoes, halved
  • Smoked Sausage: 1 pound of smoked sausage, sliced into 1/4-inch rounds
  • Cheese: 2 cups shredded sharp cheddar cheese
  • Ranch Dressing: 1 cup of ranch dressing
  • Seasonings: 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, salt and pepper to taste
  • Fresh Herbs: 1/4 cup chopped fresh chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved potatoes, sliced smoked sausage, ranch dressing, garlic powder, onion powder, paprika, salt, and pepper. Mix until everything is well coated.
  3. Transfer the mixture to a greased 9×13 inch baking dish, spreading it out evenly.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. Remove the foil, sprinkle the shredded cheddar cheese on top, and return to the oven for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  6. Once done, remove from the oven and let it cool for 5 minutes before garnishing with fresh chives.
