Ingredients

  • Chicken: 1 pound boneless, skinless chicken breasts, diced
  • Rice: 1 cup long-grain white rice, rinsed
  • Cheese: 2 cups shredded cheddar cheese
  • Green Chiles: 1 can (4 oz) diced green chiles, drained
  • Broth: 2 cups chicken broth
  • Onion: 1 medium onion, diced
  • Garlic: 2 cloves garlic, minced
  • Spices: 1 teaspoon cumin, 1 teaspoon paprika, salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the diced chicken to the skillet and cook until browned, about 5-7 minutes.
  4. Stir in the rinsed rice, chicken broth, green chiles, cumin, paprika, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  6. Remove from heat and stir in 1 cup of shredded cheddar cheese until melted and combined.
  7. Transfer the mixture to a greased baking dish, top with remaining cheese, and bake for 20 minutes or until bubbly and golden.
