  • Yield: 8 servings
  • Diet: Vegetarian

Description

Cheesy Funeral Potatoes are a delightful blend of creamy, cheesy goodness and crispy, golden-brown edges. Each bite offers a comforting warmth, with the rich flavors of cheddar cheese and sour cream perfectly complementing the tender potato base.

Ingredients

  • Potatoes: 4 cups, shredded
  • Cheddar cheese: 2 cups, shredded
  • Sour cream: 1 cup
  • Butter: 1/2 cup, melted
  • Onion: 1 medium, finely chopped
  • Garlic powder: 1 teaspoon
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Cornflakes: 2 cups, crushed (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded potatoes, cheddar cheese, sour cream, melted butter, chopped onion, garlic powder, salt, and pepper. Mix until well combined.
  3. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  4. In a separate bowl, mix the crushed cornflakes with a tablespoon of melted butter, then sprinkle evenly over the potato mixture.
  5. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the edges are bubbling.
  6. Let cool for 10 minutes before serving to allow the flavors to meld.

Notes

  • Make-ahead: You can prepare the potato mixture a day in advance and store it in the refrigerator. Just add the cornflake topping before baking.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Substitutions: For a lighter version, use Greek yogurt instead of sour cream, or swap out cheddar for a different cheese like Monterey Jack.
