A delicious and creamy cheesy cauliflower bake that is perfect for a low-carb diet.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Steam the cauliflower florets until tender, about 5-7 minutes.
  3. In a large bowl, mix together the cream cheese, sour cream, garlic powder, salt, and pepper until smooth.
  4. Add the steamed cauliflower to the mixture and stir until well coated.
  5. Transfer the cauliflower mixture to a baking dish and top with shredded cheddar and Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Garnish with chopped green onions before serving.
