Instructions
- In a mixing bowl, combine softened cream cheese, sugar, vanilla extract, sour cream, and egg. Beat until smooth and creamy.
- Lay an egg roll wrapper on a clean surface, with a corner pointing towards you.
- Place 2 tablespoons of the cheesecake filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water to help seal the edges.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Fry the egg rolls in batches for 3-4 minutes or until golden brown, turning occasionally for even cooking.
- Remove from oil and drain on paper towels.
- In a small bowl, mix sugar and cinnamon, then roll the warm egg rolls in the mixture to coat.
