    • 45 tablespoons ice water

    • 2 large Vidalia onions, thinly sliced

    • 1 cup sharp cheddar cheese, grated
    • 3 large eggs
    • 1 cup heavy cream
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ¼ teaspoon cayenne pepper (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt for the crust. Cut in butter until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. In a skillet, heat olive oil over medium heat. Add sliced Vidalia onions and sauté until caramelized, about 15-20 minutes.
  5. Roll out the chilled dough and fit it into a 9-inch pie pan. Trim excess dough.
  6. In a bowl, whisk together eggs, heavy cream, salt, black pepper, and cayenne pepper. Stir in the caramelized onions and cheddar cheese.
  7. Pour the filling into the prepared crust and smooth the top.
