Ingredients

  • 1 cup rolled oats
  • 1/2 cup grated carrots
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts

Instructions

  1. In a large bowl, combine the rolled oats, grated carrots, almond butter, honey or maple syrup, cinnamon, and nutmeg.
  2. Add the raisins and chopped walnuts, mixing until well combined.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
