- Whisk together the flour and salt in a separate large bowl.
- Pour the yeast mixture, melted butter, and egg into the dry ingredients. Stir until a rough dough begins to form.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
- Fold in the grated carrots, cinnamon, and nutmeg until evenly distributed.
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 60 minutes until doubled in size.
- Roll out the dough into a rectangle about 1/4 inch thick.
- Spread cream cheese across the surface, then sprinkle with sugar and cinnamon.
- Roll the dough tightly into a log and cut it into 1-inch pieces.
- Arrange the rolls in a greased baking dish, cover them, and let rise for another 30 minutes.
- Preheat your oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden brown.
- Mix cream cheese, powdered sugar, and vanilla extract for the frosting until smooth.
