Description

Ingredients

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, melted
  • 3 large eggs
  • 2 cups grated carrots
  • 1 cup chopped nuts (optional)
  • 1 package cream cheese (8 oz), softened
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish generously with butter or nonstick spray.
  2. Whisk together your flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl until well combined.
  3. Blend your granulated sugar, brown sugar, and melted butter in a separate large bowl until smooth and creamy.
  4. Incorporate the eggs, one at a time, mixing well after each addition.
  5. Gradually stir in the flour mixture until just combined; avoid overmixing.
  6. Fold in the grated carrots and nuts (if using) until incorporated.
  7. Pour the batter into the prepared baking dish and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Beat together the cream cheese, powdered sugar, milk, and vanilla in a mixing bowl until smooth.
  10. Drizzle the cream cheese mixture over the cooled bars before cutting into squares.
