- 1 cup unsalted butter, melted
- 3 large eggs
- 2 cups grated carrots
- 1 cup chopped nuts (optional)
- 1 package cream cheese (8 oz), softened
- 1 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish generously with butter or nonstick spray.
- Whisk together your flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl until well combined.
- Blend your granulated sugar, brown sugar, and melted butter in a separate large bowl until smooth and creamy.
- Incorporate the eggs, one at a time, mixing well after each addition.
- Gradually stir in the flour mixture until just combined; avoid overmixing.
- Fold in the grated carrots and nuts (if using) until incorporated.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Beat together the cream cheese, powdered sugar, milk, and vanilla in a mixing bowl until smooth.
- Drizzle the cream cheese mixture over the cooled bars before cutting into squares.
