Description

Indulge in the delightful contrast of textures and flavors with this Caramelized Banana Bourbon French Toast. The crispy, golden-brown exterior gives way to a soft, custardy interior, while the sweet, caramelized bananas infused with a hint of bourbon create a luscious topping that elevates this breakfast classic to new heights.

Ingredients

  • Bread: 4 slices of thick-cut brioche or challah
  • Egg Mixture: 2 large eggs, 1 cup whole milk, 1 teaspoon vanilla extract, 1 tablespoon sugar, 1/2 teaspoon cinnamon
  • Bananas: 2 ripe bananas, sliced
  • Bourbon Sauce: 2 tablespoons unsalted butter, 1/4 cup brown sugar, 2 tablespoons bourbon, pinch of salt
  • Garnish: Powdered sugar, maple syrup, and chopped pecans (optional)

Instructions

  1. In a mixing bowl, whisk together the eggs, milk, vanilla extract, sugar, and cinnamon until well combined.
  2. Preheat a non-stick skillet over medium heat and add a tablespoon of butter.
  3. Dip each slice of bread into the egg mixture, allowing it to soak for about 30 seconds on each side.
  4. Place the soaked bread in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. In a separate pan, melt the butter over medium heat, then add the brown sugar, bourbon, and salt. Stir until the sugar dissolves and the mixture bubbles.
  6. Add the sliced bananas to the bourbon sauce and cook for 2-3 minutes, until they are caramelized and tender.
  7. Serve the French toast topped with the caramelized bananas and drizzle with maple syrup and powdered sugar.

Notes

  • This dish can be made ahead by preparing the egg mixture and soaking the bread the night before. Store in the refrigerator and cook in the morning.
  • Leftover French toast can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster or skillet.
  • For a non-alcoholic version, substitute bourbon with vanilla extract or omit it entirely.
