Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until translucent, about 5 minutes.
  2. Add the sliced andouille sausage and cook until browned, about 5-7 minutes.
  3. Stir in the diced potatoes, chicken broth, Cajun seasoning, smoked paprika, and black pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the potatoes are tender.
  5. Using a potato masher, mash some of the potatoes in the pot to thicken the soup, leaving some chunks for texture.
  6. Stir in the heavy cream and shredded cheddar cheese, cooking for an additional 5 minutes until heated through.
  7. Serve hot, garnished with sliced green onions and fresh parsley.
