Description

Cajun Chicken & Sweet Potato Bowls are a delicious and healthy meal option, combining spicy Cajun chicken with roasted sweet potatoes and fresh vegetables.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet.
  3. Season the chicken breasts with Cajun seasoning and the remaining olive oil.
  4. Place the seasoned chicken on the baking sheet with the sweet potatoes.
  5. Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  6. In the last 10 minutes of cooking, add the sliced bell pepper and red onion to the baking sheet.
  7. Once cooked, remove from the oven and let rest for a few minutes before slicing the chicken.
  8. Serve the sliced chicken over the sweet potatoes and vegetables, garnished with fresh parsley.
