Cajun Chicken & Sweet Potato Bowls are a delicious and healthy meal option, combining spicy Cajun chicken with roasted sweet potatoes and fresh vegetables.

- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 red onion, sliced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet.
- Season the chicken breasts with Cajun seasoning and the remaining olive oil.
- Place the seasoned chicken on the baking sheet with the sweet potatoes.
- Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
- In the last 10 minutes of cooking, add the sliced bell pepper and red onion to the baking sheet.
- Once cooked, remove from the oven and let rest for a few minutes before slicing the chicken.
- Serve the sliced chicken over the sweet potatoes and vegetables, garnished with fresh parsley.
Notes
- Adjust the amount of Cajun seasoning to your spice preference.
- Feel free to add other vegetables like zucchini or broccoli.
