- 1 medium butternut squash, peeled and cubed
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Water as needed for consistency
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, and pepper, and spread it on a baking sheet.
- Roast the squash for 25-30 minutes, or until tender and slightly caramelized.
- In a food processor, combine the roasted butternut squash, tahini, lemon juice, garlic, cumin, and a pinch of salt.
- Blend until smooth, adding water as needed to reach desired consistency.
- Taste and adjust seasoning if necessary.
- Serve with pita chips or fresh vegetables.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- This hummus can be stored in the refrigerator for up to a week.
