Description

Butternut Squash Hummus is a creamy and flavorful dip made from roasted butternut squash, tahini, and spices, perfect for snacking or as a spread.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Water as needed for consistency

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper, and spread it on a baking sheet.
  3. Roast the squash for 25-30 minutes, or until tender and slightly caramelized.
  4. In a food processor, combine the roasted butternut squash, tahini, lemon juice, garlic, cumin, and a pinch of salt.
  5. Blend until smooth, adding water as needed to reach desired consistency.
  6. Taste and adjust seasoning if necessary.
  7. Serve with pita chips or fresh vegetables.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
