Ingredients

  • Pasta: 8 oz. of rotini or penne pasta, cooked al dente
  • Vegetables: 2 cups cherry tomatoes, halved; 1 cup cucumber, diced; 1/2 red onion, finely chopped
  • Cheese: 1 cup fresh mozzarella balls, halved
  • Herbs: 1/4 cup fresh basil, chopped; 1/4 cup fresh parsley, chopped
  • Vinaigrette: 1/4 cup extra virgin olive oil; 2 tbsp balsamic vinegar; 1 clove garlic, minced; salt and pepper to taste

Instructions
