Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together brown sugar, soy sauce, apple cider vinegar, olive oil, garlic, ginger, salt, and pepper to create the glaze.
  3. Place the chicken in a roasting pan and brush the glaze all over the chicken, making sure to get under the skin where possible.
  4. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Baste the chicken with the glaze every 20 minutes for extra flavor and caramelization.
  6. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
  7. Garnish with fresh herbs if desired and serve.
