- 2 large sweet potatoes, peeled and cut into bite-sized pieces
- 1 large onion, cut into wedges
- 1/4 cup brown sugar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: garlic powder and paprika
Instructions
- Preheat your oven to 400°F (200°C).
- Mix the brown sugar, olive oil, salt, pepper, and any additional spices in a small bowl.
- Cut sweet potatoes and onion into bite-sized pieces.
- Place chicken breasts on a sheet pan and surround them with sweet potatoes and onion.
- Drizzle the brown sugar marinade over the chicken and vegetables.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
For added flavor, marinate chicken and sweet potatoes beforehand. You can adapt this recipe for an air fryer, cooking at 375°F (190°C) for about 20 minutes.
