  • 2 large sweet potatoes, peeled and cut into bite-sized pieces
  • 1 large onion, cut into wedges
  • 1/4 cup brown sugar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic powder and paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the brown sugar, olive oil, salt, pepper, and any additional spices in a small bowl.
  3. Cut sweet potatoes and onion into bite-sized pieces.
  4. Place chicken breasts on a sheet pan and surround them with sweet potatoes and onion.
  5. Drizzle the brown sugar marinade over the chicken and vegetables.
  6. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  7. Remove from the oven and let it rest for a few minutes before serving.

Notes

For added flavor, marinate chicken and sweet potatoes beforehand. You can adapt this recipe for an air fryer, cooking at 375°F (190°C) for about 20 minutes.
