- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup vegetable broth
- 1 cup milk
- 1/2 cup onion, chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the flour and cook for 1-2 minutes.
- Gradually add the vegetable broth and milk, stirring constantly.
- Add the broccoli florets and bring to a simmer.
- Cook until the broccoli is tender, about 10 minutes.
- Stir in the shredded cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.

- For a thicker soup, blend a portion of the soup and mix it back in.
