Instructions
- Cook the sausage: Heat your skillet over medium-high heat. Add the breakfast sausage, breaking it apart with your spatula. Cook until it turns beautifully browned, about 5–7 minutes.
- Scramble the eggs: Lower the heat to medium. In a mixing bowl, whisk the eggs until well-beaten. Pour into the skillet with the sausage, stirring gently until they just set, about 3–4 minutes. Remove from heat.
- Mix the filling: In a large bowl, combine the cooked sausage and scrambled eggs. Fold in the shredded cheese and hash browns, seasoning with salt and pepper. Ensure everything is well-coated.
- Assemble the egg rolls: Lay an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of filling onto the center and roll tightly, sealing with water.
- Fry the egg rolls: In a deep pan, heat vegetable oil over medium heat until it shimmers. Fry egg rolls until golden brown, about 3-4 minutes per side. Drain on paper towels.
