Instructions
- Preheat the grill or a skillet over medium-high heat.
- Rub the salmon fillets with olive oil and coat them with blackening seasoning.
- Place the salmon on the grill or skillet and cook for about 4-5 minutes on each side, or until cooked through.
- In a bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt to make the salsa.
- Serve the blackened salmon topped with the mango salsa.

- For a milder salsa, omit the jalapeño.
