Description

  • Beef: 2 pounds chuck roast, cut into 1-inch cubes
  • Vegetables:
    • 3 medium carrots, sliced
    • 2 medium potatoes, diced

    • 2 cloves garlic, minced
  • Liquids:
    • 4 cups beef broth
    • 1 cup red wine (optional)
  • Herbs & Spices:
    • 2 teaspoons dried thyme
    • 1 bay leaf
    • Salt and pepper to taste
  • Thickener: 2 tablespoons all-purpose flour

Instructions

  1. In a large pot, heat 2 tablespoons of oil over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes.
  2. Remove the beef and set aside. In the same pot, add the onions and garlic, sautéing until translucent, about 3 minutes.
  3. Stir in the flour and cook for 1 minute to create a roux.
  4. Add the red wine (if using) and scrape the bottom of the pot to deglaze, cooking for 2 minutes.
  5. Return the beef to the pot, then add the broth, carrots, potatoes, thyme, bay leaf, salt, and pepper.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender and the stew has thickened.
  7. Remove the bay leaf before serving. Adjust seasoning as needed.
