Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup parsnips, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef chunks and brown on all sides.
- Remove the beef and set aside. In the same pot, add onions and garlic, sauté until softened.
- Stir in tomato paste, thyme, and rosemary, cooking for another minute.
- Add the beef back to the pot along with the beef broth, carrots, potatoes, and parsnips.
- Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until the beef is tender.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- Feel free to add other root vegetables like turnips or sweet potatoes.
- This stew can be made a day in advance for better flavor.
