Ingredients

  • Chicken: 1 lb boneless, skinless chicken breasts, diced
  • Rice: 1 cup long-grain white rice, rinsed
  • Vegetables: 1 cup bell peppers, diced; 1 cup corn, frozen or fresh; 1/2 cup red onion, diced
  • Liquids: 2 cups chicken broth; 1/2 cup BBQ sauce; 1/4 cup ranch dressing
  • Spices: 1 tsp garlic powder; 1 tsp onion powder; 1/2 tsp smoked paprika; salt and pepper to taste
  • Garnish: 1/4 cup green onions, sliced; 1/2 cup shredded cheddar cheese

Instructions

  1. In a large skillet, heat 1 tablespoon of oil over medium heat. Add the diced chicken and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Cook for 5-7 minutes until the chicken is browned and cooked through.
  2. Add the diced bell peppers, corn, and red onion to the skillet. Sauté for an additional 3-4 minutes until the vegetables are tender.
  3. Stir in the rice, chicken broth, BBQ sauce, and ranch dressing. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes or until the rice is cooked and has absorbed the liquid.
  5. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  6. Top with shredded cheddar cheese and sliced green onions before serving.
