Description

BBQ Chicken Quesadillas are a delightful fusion of smoky, tangy barbecue sauce and tender chicken, enveloped in a crispy tortilla. Each bite offers a satisfying crunch followed by a melty, cheesy interior that bursts with flavor, making them an irresistible snack or meal.

  • For the Quesadillas:
    • 2 cups cooked chicken, shredded
    • 1 cup BBQ sauce
    • 1 cup shredded cheddar cheese
    • 1 cup shredded mozzarella cheese
    • 4 large flour tortillas
    • 2 tablespoons olive oil
  • For Serving:
    • 1/2 cup sour cream
    • 1/4 cup chopped green onions
    • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a bowl, combine the shredded chicken and BBQ sauce until well coated.
  2. Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
  3. Place one tortilla in the skillet and sprinkle half of the cheddar and mozzarella cheese evenly over it.
  4. Spread half of the BBQ chicken mixture over the cheese, then top with the remaining cheese.
  5. Cover with a second tortilla and cook for 3-4 minutes until the bottom is golden brown.
  6. Carefully flip the quesadilla and add the remaining olive oil to the skillet, cooking for another 3-4 minutes until the second side is golden and the cheese is melted.
  7. Remove from the skillet and let it cool for a minute before slicing into wedges.
  8. Serve with sour cream, green onions, and cilantro on the side.
