Description

Ingredients

  • Rice: 3 cups cooked jasmine rice, preferably day-old for optimal texture
  • Vegetables: 1 cup diced bell peppers, 1 cup frozen peas, 1 cup shredded carrots
  • Protein: 1 cup cooked shrimp or chicken, diced
  • Sauce: 1/2 cup mayonnaise, 2 tablespoons sweet chili sauce, 1 tablespoon sriracha, 1 teaspoon lime juice
  • Garnish: 2 green onions, sliced, 1 tablespoon sesame seeds

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Add the cooked rice and stir-fry for about 5-7 minutes until it becomes crispy and golden brown.
  3. In a separate bowl, mix the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
  4. Add the diced bell peppers, peas, and carrots to the skillet, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. Stir in the cooked shrimp or chicken and the sauce mixture, cooking for another 2-3 minutes until everything is well combined and heated through.
  6. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
