Indulge in the creamy, dreamy experience of Banana White Cake Truffles, where the soft, moist cake meets a velvety white chocolate coating. Each bite bursts with the sweet, rich flavor of ripe bananas, complemented by a hint of vanilla, creating a delightful treat that melts in your mouth.

Ingredients

Scale
  • For the Cake:
    • 1 cup all-purpose flour
    • 1/2 cup granulated sugar
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 1 ripe banana, mashed
    • 1 teaspoon vanilla extract
  • For the Coating:
    • 8 ounces white chocolate, chopped
    • 1 tablespoon coconut oil (optional, for smoothness)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the mashed banana and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into a greased 8-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool completely before crumbling it into fine pieces in a large bowl.
  8. In a microwave-safe bowl, melt the white chocolate and coconut oil together in 30-second intervals, stirring until smooth.
  9. Add the melted chocolate to the crumbled cake and mix until well combined.
  10. Form the mixture into small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  11. Chill the truffles in the refrigerator for at least 30 minutes to firm up.
  12. Once chilled, dip each truffle in the remaining melted white chocolate and place back on the parchment to set.
