    • 1 ½ cups graham cracker crumbs
    • ½ cup unsalted butter, melted
    • ¼ cup granulated sugar
  • Cheesecake Filling:
    • 16 oz cream cheese, softened
    • ¾ cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • ½ cup sour cream
  • Baklava Topping:
    • 1 cup chopped almonds
    • 1 cup chopped pistachios
    • ½ cup honey
    • 1 tsp ground cinnamon
    • ¼ cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch tart pan to form the crust.
  3. Bake the crust for 10 minutes, then remove and let it cool.
  4. In a large bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
  5. Pour the cheesecake filling into the cooled crust and smooth the top.
  6. Bake for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.
  7. While the cheesecake cools, prepare the baklava topping by mixing chopped almonds, pistachios, honey, cinnamon, and melted butter in a bowl.
  8. Once the cheesecake has cooled, spread the baklava topping evenly over the top and refrigerate for at least 4 hours or overnight before serving.
