Description

Ingredients

  • 2 cups cooked risotto
  • 1 cup mozzarella cheese, diced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cooked risotto, mozzarella, Parmesan, parsley, salt, and pepper.
  3. Form the mixture into small balls, about the size of a golf ball.
  4. Dip each ball into the beaten eggs, then roll in breadcrumbs to coat.
  5. Place the arancini on a baking sheet lined with parchment paper.
  6. Spray the arancini with olive oil to help them crisp up.
  7. Bake for 20-25 minutes or until golden brown and crispy.
  8. Serve warm with marinara sauce for dipping.
