Baked Arancini are delicious, crispy rice balls filled with cheese and herbs, perfect for a snack or appetizer.
Ingredients

- 2 cups cooked risotto
- 1 cup mozzarella cheese, diced
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the cooked risotto, mozzarella, Parmesan, parsley, salt, and pepper.
- Form the mixture into small balls, about the size of a golf ball.
- Dip each ball into the beaten eggs, then roll in breadcrumbs to coat.
- Place the arancini on a baking sheet lined with parchment paper.
- Spray the arancini with olive oil to help them crisp up.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve warm with marinara sauce for dipping.
Notes
- Make sure the risotto is cold before forming the balls to help them hold their shape.
- You can add other fillings like peas or cooked meat for variation.
- These can be made ahead of time and frozen before baking.
