Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 sweet potato, peeled and cubed
- 1 zucchini, diced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic and cook for another minute.
- Add sweet potato, zucchini, and bell pepper; cook for 5 minutes.
- Pour in vegetable broth and diced tomatoes.
- Add thyme, basil, salt, and pepper; bring to a boil.
- Reduce heat and simmer for 20-25 minutes until vegetables are tender.
- Serve hot, garnished with fresh parsley.
Notes
- Feel free to add any other seasonal vegetables you have on hand.
- This soup can be stored in the refrigerator for up to 5 days.
- It can also be frozen for up to 3 months.
