Description

These Apple Cider Cookies are a delightful blend of warm spices and sweet apple flavor, creating a soft and chewy texture that melts in your mouth. Each bite is infused with the essence of fall, featuring hints of cinnamon and nutmeg that perfectly complement the tartness of the apple cider.

Ingredients

Scale
  • Dry Ingredients:
    • 2 1/2 cups all-purpose flour
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 1 tsp ground cinnamon
    • 1/2 tsp ground nutmeg
    • 1/4 tsp ground ginger
    • 1/2 tsp salt
  • Wet Ingredients:
    • 1 cup unsalted butter, softened
    • 1 cup brown sugar, packed
    • 1/2 cup granulated sugar
    • 1 large egg
    • 1 tsp vanilla extract
    • 1 cup apple cider
  • Optional Add-ins:
    • 1 cup chopped walnuts or pecans
    • 1 cup dried cranberries or raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the dry ingredients: flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the apple cider, and mix until just combined.
  6. If using, fold in the chopped nuts and dried fruit.
  7. Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set but still soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
