A nutritious and flavorful salad made with African teff grain, packed with vitamins and minerals.


Ingredients

  • 1 cup teff grain
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the teff grain under cold water.
  2. In a pot, bring 2 cups of water to a boil and add the teff grain.
  3. Reduce heat, cover, and simmer for about 15 minutes or until the water is absorbed.
  4. Remove from heat and let it cool.
  5. In a large bowl, combine the cooled teff with cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
