Description
A nutritious and flavorful salad made with African teff grain, packed with vitamins and minerals.
Ingredients

- 1 cup teff grain
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the teff grain under cold water.
- In a pot, bring 2 cups of water to a boil and add the teff grain.
- Reduce heat, cover, and simmer for about 15 minutes or until the water is absorbed.
- Remove from heat and let it cool.
- In a large bowl, combine the cooled teff with cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- Teff is gluten-free and a great source of protein.
- Feel free to add other vegetables or nuts for extra crunch.
- This salad can be stored in the refrigerator for up to 3 days.
